Our AAA Four Diamond property boasts 446 rooms and suites, over 30,000 square feet of banquet space, a dynamic gaming floor and 7 food and beverage outlets. We are nearing the completion of an exciting multi-million dollar expansion that brings a great opportunity to join our enterprise and leadership team.

 In this role, you will report directly to the Corporate Director of Event Services and oversee all facets of banquet operations, managing an hourly team of 30 which that includes 4 banquet captains.

This position will actively oversee all aspects of the day-to-day oversight of Banquets Operations, including strategic planning, execution of events, leadership, enhanced employee engagement, financial performance, training and development of staff, upholding service standards as well as demonstrating the GILA WAY. 

Essential Duties and Responsibilities:

  • Leads through detailed communication, administration and financial controls resulting in the execution of exceptional food quality, service and guest experiences.

  • Describes, assigns and delegates duties and authority clearly and responsibly for the operation and follows up on expectations.
  • Fosters a team that possesses  guest service, team cooperation, financial responsibility and asset management
  • Manage daily banquet details that include, but not limited to, planning, organizing and executing breakfasts, breaks, plated and buffet lunches, dinners, cocktail receptions, Player Development events and high level meetings.
  • Oversee the set- up of function rooms to include, but not limited to, placement of table china, linen according to event specifications & dedicated floorplan;  able to conduct a detailed walk-thru of all space prior event start time.
  • Oversee the break- down of the function room and ensure proper storage of all banquet equipment.
  • Responsible for the specific and timely set up of all functions and meetings while maintaining high standards of food and beverage presentation and meeting specifications.
  • Through communicate all daily activities, in person or by written communication, to the banquet staff to ensure a smooth transition and follow-up from one function to the next.
  • Effectively review all written communication within the department that pertains to banquet event orders, room set-ups & server station assignments.
  • Maintain constant communication with the Corporate Director of Events, Event Managers, Executive Chef and culinary team as it applies to the client at hand.
  • Continuously communicate information to the kitchen and other support departments prior to and during events.
  • Responsible for cultivating client relationships with on-site contacts, meeting planners, and attendees and providing exceptional service.
  • Responsible for maintaining all policies, procedures and quality standards within the department and enterprise to ensure a high quality, cost effective and customer focused operation.
  • Cultivate the development and implementation of training procedures within the department to ensure high level service, stellar food and beverage presentation and the ability to create exceptional experiences.
  • Conducts quarterly communication meetings and  trainings with all banquet staff, manages to ensure the thorough knowledge of key company and departmental information, and solicits feedback to ensure understanding; open to discussing feedback and addressing concerns.
  • Works closely with Executive Steward to control and analyzes cost, breakage and quality while maintaining an accurate inventory of banquet glassware, chinaware and silverware.
  • Inspect and oversee the cleanliness and maintenance of all function space, public areas, and service areas within the department. 
  • Prepare weekly work schedules in accordance with staffing guidelines and labor forecast and adjust schedules throughout the week to meet business demands.
  • Responsible for bi-weekly approval of payroll and PTO for banquet personnel.
  • Maintain accurate par levels and inventory of supplies and equipment within the department.
  • Participate in monthly inventory that includes but not limited to chinaware, glassware, silverware, linen, banquet equipment, paper goods and liquor.
  • Monitor and develop team member performance to include, but not limited to, supervising, scheduling, conducting coach and counseling, disciplinary action, evaluations and delivering recognition & merit increases.
  • Applies and continually broadens knowledge of food and beverage cutting edge presentation with emphasis on current event trends.
  • Researches and recommends new products, processes and services for evaluation, development and implementation to ensure the enterprises competitive advantage
  • Actively recruit, interview and handle on-boarding training for the department
  • Ensure compliance with all required enterprise training pertaining to procedures, safety, sanitation and alcohol awareness.
  • Responsible for the understanding departmental financial statements and working diligently to keep all costs in line with budges to ensure proper profit margins
  • Works closely Corporate Director of Event Services to develop departmental operating and capital budgets.
  • Works closely Banquet team to ensure accuracy of daily banquet checks and the delivery and sign off on the checks with each group or on-site contact.
  • Researches and recommends new products, processes and services for review, development and implementation to ensure the department’s competitive advantage in the marketplace
  • Perform other job-related duties as requested.

Skills/ Requirements

  • 2-3 years of Banquet leadership experience required
  • High volume banquet operational experience required
  • Strong communication skills, both verbal and written.
  • Excellent interpersonal & conflict resolution skills.
  • Must have a keen attention to detail and hyper-focused organizational skills.
  • Must have exceptional supervisory talent.
  • Detailed knowledge of room set-ups, capacities for specific events.
  • Exceptional food and beverage knowledge.

  • Must acquire and maintain a valid Gila River Environmental Health Food Handlers Card, Alcohol Awareness Certification, Blood-Borne Pathogens (BBP) and other required compliance trainings.
  • This position must have, or an ability to acquire within one year, an in-depth knowledge and thorough understanding of Enterprise Policies and Procedures, governmental regulations, and technical rules relevant to their responsibilities.
